A delicious and nutritious African Peanut Stew that warms the heart.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup peanut butter
  • 2 cups sweet potatoes peeled and cubed
  • 1 can (15 oz) chickpeas drained and rinsed
  • 2 cups spinach
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger, sautéing until the onion is translucent.
  3. Stir in the diced tomatoes and vegetable broth, bringing to a simmer.
  4. Add the peanut butter, sweet potatoes, and chickpeas, and cook until sweet potatoes are tender.
  5. Stir in the spinach until wilted, and season with salt and pepper.

Notes
