  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 can diced tomatoes
  • 1 can chickpeas drained
  • 1 cup unsweetened peanut butter
  • 4 cups vegetable broth
  • 1 cup sweet potatoes chopped
  • 1 cup spinach chopped
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger; sauté until softened.
  3. Stir in the spices and cook for another minute.
  4. Add the diced tomatoes, chickpeas, peanut butter, and vegetable broth; stir to combine.
  5. Bring to a simmer, then add sweet potatoes and cook until tender.
  6. Stir in the spinach and cook until wilted.
  7. Season with salt and pepper, serve warm.
