  • 2 pounds chicken, cut into pieces
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 carrot, chopped
  • 1 scotch bonnet pepper, whole
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. In a large bowl, combine the chicken with curry powder, allspice, and salt. Let marinate for at least 30 minutes.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the onion, garlic, and bell pepper, and sauté until soft.
  4. Add the marinated chicken to the pot and fry until browned on all sides.
  5. Stir in the carrot, chicken broth, and scotch bonnet pepper. Bring to a boil.
  6. Reduce heat, cover, and simmer for 30-40 minutes, until the chicken is cooked through.
  7. Remove the scotch bonnet pepper and serve hot.
