  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 green onions, chopped
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • 1 cup chicken broth
  • 1 Scotch bonnet pepper, whole
  • 1 lime, juiced

Instructions

  1. In a bowl, mix the chicken pieces with curry powder, allspice, garlic, ginger, and lime juice. Let it marinate for at least 1 hour.
  2. Heat oil in a large pot over medium heat. Add chopped onions and bell pepper, sauté until soft.

  4. Pour in chicken broth and add the whole Scotch bonnet pepper. Bring to a boil.
