Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups chicken broth
  • 1 cup rice
  • 3 eggs
  • 2 lemons, juiced
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 stalks of celery, diced
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, combine chicken pieces and broth, and bring to a boil.
  2. Skim off any foam and add the onion, carrots, and celery.
  3. Reduce heat and simmer until chicken is cooked through.
  4. Remove chicken, shred it, and return it to the pot.
  5. Stir in the rice and cook until tender.
  6. In a bowl, whisk together eggs and lemon juice.
  7. Slowly ladle in some hot broth to temper the eggs, then whisk back into the pot.
  8. Season with salt and pepper before serving.

  • For a richer flavor, you can roast the chicken beforehand.
