A delightful blend of banana and pineapple that creates a moist and flavorful bread.

  • 2 ripe bananas
  • 1 cup crushed pineapple, drained
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas with a fork.
  3. Add the crushed pineapple and mix well.
  4. Stir in the sugar and melted butter.
  5. Add the beaten egg and vanilla extract, mixing until combined.
  6. In another bowl, combine the baking soda, salt, and flour.
  7. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  8. Pour the batter into a greased loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For added flavor, consider adding chopped nuts or shredded coconut.
  • This bread can also be made with fresh pineapple if you prefer.
