A delicious and easy recipe for beef and rice stuffed bell peppers, perfect for family dinners.

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the ground beef with the onion and garlic until cooked through.
  4. Add the cooked rice, diced tomatoes, and Italian seasoning to the skillet. Mix well and season with salt and pepper.
  5. Stuff each bell pepper with the beef and rice mixture and place in a baking dish.
  6. Top with shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Notes

  • For an extra kick, add some chili powder to the beef mixture.
  • Feel free to use quinoa instead of rice for a healthier option.
