This Cajun Potato Soup is an easy and comforting dish made with turkey bacon, perfect for chilly days.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sauté until translucent.
  3. Add diced potatoes and chicken broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and Cajun seasoning.
  6. Blend the soup for a smooth consistency if desired.
  7. Season with salt and pepper, then top with crispy bacon before serving.

Notes

  • Adjust the spiciness by adding more or less Cajun seasoning.
