Ingredients

  • 2 pounds beef stew meat
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 bell peppers, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup carrots, sliced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Brown the beef stew meat on all sides.
  4. Add the beef broth, diced tomatoes, bell peppers, cumin, chili powder, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours.
  6. Stir in the sliced carrots and cook for an additional 30 minutes.
  7. Adjust seasoning as needed and serve hot.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
