  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons fresh herbs (thyme, parsley)
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, sauté onion and garlic until translucent.
  3. Add potatoes and vegetable broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Puree the mixture until smooth using an immersion blender.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Add fresh herbs, salt, and pepper. Cook for a few more minutes.

Notes
