  • 1 cup long-grain white rice
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup shredded cheese
  • 1 cup corn
  • 1 can black beans, drained and rinsed
  • 1 diced bell pepper
  • 1 onion, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the onion and bell pepper; cook until soft.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in taco seasoning, rice, beef broth, corn, and black beans. Bring to a boil.
