  • 4 cups chicken broth
  • 2 cups water
  • 2 cups egg noodles
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, celery, and garlic. Sauté until softened.
  3. Add chicken broth and water, then bring to a boil.
  4. Once boiling, add the chicken breasts and thyme. Reduce heat and simmer until chicken is cooked through.
