Ingredients

  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 4 slices turkey bacon

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients, stirring until just combined.
  4. In a small bowl, mix the brown sugar and cinnamon together to create the filling.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet.
  6. Sprinkle a spoonful of the cinnamon filling over the pancake before flipping it.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. In a separate pan, cook the turkey bacon until crispy.
  9. Serve pancakes hot with crispy turkey bacon on the side.

Notes

  • For a sweeter touch, add maple syrup on top.
  • Leftover pancakes can be stored in the refrigerator.
