  • 4 cups zucchini, chopped
  • 1 cup turkey bacon, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Remove the bacon and set aside. In the same pot, add the onion and garlic, sautéing until translucent.
  3. Add the chopped zucchini and cook for about 5 minutes.
  4. Pour in the vegetable broth, bring to a boil, and then reduce heat. Simmer for 15 minutes.
  5. Puree the soup using an immersion blender until smooth. Stir in the heavy cream and season with salt and black pepper.
  6. Reheat if necessary and serve, garnished with the crispy turkey bacon.
