  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 3 cups beef broth
  • 1 tablespoon taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Stir in the diced tomatoes, black beans, corn, beef broth, and taco seasoning.
  4. Bring the soup to a simmer and cook for 15-20 minutes.
  5. Reduce the heat and stir in the heavy cream and cheddar cheese.
  6. Cook until the cheese is melted and the soup is heated through.
  7. Season with salt and pepper to taste before serving.
