  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened.
  2. Add the chicken breasts and cook until browned.
  3. Pour in the diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add the broken lasagna noodles and cook according to package instructions until tender.
  5. Stir in the ricotta, mozzarella, and Parmesan cheese until melted.
  6. Add the spinach and cook until wilted. Season with salt and pepper to taste.

Notes

  • This soup can be made in advance and reheated for a quick dinner.
  • Feel free to add additional vegetables like mushrooms or bell peppers.
