  • 1 pound chicken breast, cooked and shredded
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/4 cup cilantro, chopped
  • tortilla strips for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic; sauté until soft.
  3. Stir in the shredded chicken, black beans, corn, chicken broth, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  5. Stir in the heavy cream and cook for another 5 minutes.
  6. Serve hot, topped with shredded cheese, cilantro, and tortilla strips.

Notes

  • For extra flavor, add a squeeze of lime juice before serving.
