1 cup sushi rice
2 cups water
1 pound sushi-grade salmon
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon wasabi
1 avocado, sliced
1 cucumber, sliced
1 tablespoon green onions, chopped
1 tablespoon sesame seeds
Instructions
Rinse the sushi rice under cold water until the water runs clear.
Combine rice and water in a rice cooker and cook according to manufacturer’s instructions.
Once cooked, let the rice cool slightly and then spread it out on a sushi mat.
Slice the salmon thinly and marinate with soy sauce, sesame oil, and wasabi.
Form the cooled rice into rectangular shapes and pan-fry until crispy on all sides.
Top the crispy rice with slices of marinated salmon, avocado, and cucumber.
Garnish with chopped green onions and sesame seeds before serving.
Notes
For an extra kick, add more wasabi to the marinade.
