  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a slow cooker, combine chicken, broth, carrots, celery, onion, garlic, and Italian seasoning.
  2. Cover and cook on low for 6-8 hours or until chicken is cooked through.
  3. Remove the chicken, shred it, and return to the slow cooker.
  4. Stir in heavy cream and Parmesan cheese, and cook for an additional 30 minutes.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.
