- 4 cups diced potatoes
- 1 cup turkey bacon, cooked and crumbled
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat and add onions and garlic. Cook until softened.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in heavy cream, thyme, rosemary, and season with salt and pepper.
- Add cheddar cheese and stir until melted.
- Serve hot, topped with crispy turkey bacon.
Notes
- For a vegetarian version, omit the turkey bacon and use vegetable broth.
