Delicious and creamy potato soup with a hint of garlic and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add onions and garlic. Cook until softened.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup to your desired consistency.
  4. Stir in heavy cream, thyme, rosemary, and season with salt and pepper.
  5. Add cheddar cheese and stir until melted.
  6. Serve hot, topped with crispy turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Feel free to add extra herbs for more flavor.
