This Dump and Bake Chicken Tzatziki with Rice recipe is an easy and delicious comfort meal, perfect for busy weeknights.

Ingredients

  • 2 cups uncooked long-grain rice
  • 4 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup tzatziki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the uncooked rice and chicken broth.
  3. Season the chicken thighs with garlic powder, onion powder, dill, salt, and pepper.
  4. Arrange the seasoned chicken over the rice mixture.
  5. Drizzle with olive oil and spread tzatziki sauce on top of the chicken.
  6. Cover with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes until the chicken is cooked through and rice is tender.

Notes

  • For a spicy kick, add some crushed red pepper flakes to the tzatziki sauce.
  • Feel free to substitute the chicken with your choice of protein.
