- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 8 ounces egg noodles
- 1 cup frozen peas
- Salt to taste
- Black pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned on all sides. Remove from pot and set aside.
- Add onion, carrots, and celery to the pot and sauté until softened.
- Add garlic and cook for an additional minute.
- Pour in chicken broth and add thyme. Bring to a boil.
- Return chicken to the pot and reduce heat. Cover and simmer for 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add egg noodles and cook until tender.
- Stir in frozen peas, salt, and pepper. Serve warm.

- For extra flavor, add fresh herbs like parsley or dill before serving.
