Easy Chicken Noodle Soup with Egg Noodles

A warm and hearty chicken noodle soup that is easy to make and perfect for any occasion.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 8 ounces egg noodles
  • 1 cup frozen peas
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned on all sides. Remove from pot and set aside.
  3. Add onion, carrots, and celery to the pot and sauté until softened.
  4. Add garlic and cook for an additional minute.
  5. Pour in chicken broth and add thyme. Bring to a boil.
  6. Return chicken to the pot and reduce heat. Cover and simmer for 20 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Add egg noodles and cook until tender.
  9. Stir in frozen peas, salt, and pepper. Serve warm.

Notes

  • For extra flavor, add fresh herbs like parsley or dill before serving.
  • This soup can easily be made in advance and reheated.
