This easy chicken pho recipe offers a comforting bowl of homemade goodness that warms the soul.

  • 1 pound chicken breast
  • 8 cups chicken broth
  • 1 onion, halved
  • 3 cloves garlic, smashed
  • 1 piece fresh ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • 1 package rice noodles
  • 2 cups bean sprouts
  • 1 bunch fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 jalapeño, sliced

Instructions

  1. In a large pot, combine chicken broth, onion, garlic, ginger, star anise, and cinnamon stick. Bring to a boil.
  2. Add chicken breast and cook until no longer pink, about 15 minutes. Remove chicken, shred, and set aside.
  3. Stir in fish sauce, then add rice noodles to the pot. Cook according to package instructions.
  4. To serve, place noodles in a bowl, top with shredded chicken, and garnish with bean sprouts, cilantro, lime wedges, and jalapeño.
