- 1 pound chicken breast
- 8 cups chicken broth
- 1 onion, halved
- 3 cloves garlic, smashed
- 1 piece fresh ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 2 tablespoons fish sauce
- 1 package rice noodles
- 2 cups bean sprouts
- 1 bunch fresh cilantro, chopped
- 1 lime, cut into wedges
- 1 jalapeño, sliced
- In a large pot, combine chicken broth, onion, garlic, ginger, star anise, and cinnamon stick. Bring to a boil.
- Add chicken breast and cook until no longer pink, about 15 minutes. Remove chicken, shred, and set aside.
- Stir in fish sauce, then add rice noodles to the pot. Cook according to package instructions.
- To serve, place noodles in a bowl, top with shredded chicken, and garnish with bean sprouts, cilantro, lime wedges, and jalapeño.
