A warm and comforting chicken taco soup that’s easy to make and full of flavor.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chicken and cook until browned on all sides.
  3. Stir in the diced tomatoes, black beans, corn, taco seasoning, chicken broth, and water.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with your favorite toppings.

  • This soup can be topped with avocado, cheese, or tortilla chips.
