This easy creamy tomato soup combines the flavors of turkey bacon and fresh herbs for a delicious and comforting meal.

Ingredients

  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes (14.5 oz each)
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Add the diced tomatoes and chicken stock, bringing to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream, basil, salt, and pepper. Simmer for another 5 minutes.
  6. Blend the soup until smooth, then stir in the crumbled bacon and fresh parsley before serving.

Notes

  • For a thicker soup, blend longer.
  • Garnish with more fresh herbs if desired.
