These Festive Vegan Linzer Cookies are the perfect sweet treat to celebrate the holidays, combining the flavors of nutty almond flour and tangy raspberry jam.

Ingredients

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, all-purpose flour, powdered sugar, melted coconut oil, vanilla extract, and salt. Mix until a dough forms.
  3. Roll the dough into a thick sheet, about 1/4 inch in thickness, on a parchment-lined baking sheet.
  4. Use cookie cutters to cut out shapes, and place them on a baking sheet.
  5. Cut out smaller shapes from the center of half of the cookies.
  6. Bake for 10-12 minutes or until the edges are slightly golden.
  7. Let cookies cool completely before spreading raspberry jam on the solid cookies and topping them with the cut-out ones.
  8. Dust with powdered sugar if desired.

Notes

  • For a gluten-free version, use a gluten-free all-purpose flour blend.
  • Store any leftover cookies in an airtight container for up to a week.
