1 cup almond flour
1/2 cup all-purpose flour
1/4 cup powdered sugar
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup raspberry jam
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine almond flour, all-purpose flour, powdered sugar, melted coconut oil, vanilla extract, and salt. Mix until a dough forms.
Roll the dough into a thick sheet, about 1/4 inch in thickness, on a parchment-lined baking sheet.
Use cookie cutters to cut out shapes, and place them on a baking sheet.
Cut out smaller shapes from the center of half of the cookies.
Bake for 10-12 minutes or until the edges are slightly golden.
Let cookies cool completely before spreading raspberry jam on the solid cookies and topping them with the cut-out ones.
Dust with powdered sugar if desired.
Notes
For a gluten-free version, use a gluten-free all-purpose flour blend.
Store any leftover cookies in an airtight container for up to a week.
