A warm and comforting roasted tomato soup recipe featuring turkey bacon for added flavor.

Ingredients

  • 2 pounds ripe tomatoes
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast tomatoes for about 30 minutes or until caramelized.
  4. In a pot, cook turkey bacon over medium heat until crispy. Remove and chop.
  5. In the same pot, add onion and garlic, sauté until softened.
  6. Add roasted tomatoes, broth, basil, and balsamic vinegar. Bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Blend the soup until smooth and adjust seasoning if needed.
  9. Serve hot, garnished with chopped turkey bacon.

Notes

  • This soup can be blended or left chunky based on preference.
  • For a creamier texture, add a splash of cream before serving.
