- 2 pounds ripe tomatoes
- 4 slices turkey bacon
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 1 tablespoon balsamic vinegar
- Preheat oven to 400°F (200°C).
- Arrange tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast tomatoes for about 30 minutes or until caramelized.
- In a pot, cook turkey bacon over medium heat until crispy. Remove and chop.
- In the same pot, add onion and garlic, sauté until softened.
- Add roasted tomatoes, broth, basil, and balsamic vinegar. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Blend the soup until smooth and adjust seasoning if needed.
- Serve hot, garnished with chopped turkey bacon.
