  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup lemon juice
  • 2 eggs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat and sauté onions and garlic until fragrant.
  2. Add chicken and cook until browned.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in the rice and cook until tender.
  5. Whisk together lemon juice and eggs, then temper with hot soup before adding to the pot.
  6. Season with oregano, salt, and pepper and serve hot.
