  • 1 cup diced onion
  • 2 garlic cloves, minced
  • 1 pound chicken breast, cooked and shredded
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add shredded chicken and chicken broth to the pot. Bring to a simmer.
  5. Add orzo pasta and cook until al dente.
  6. In a bowl, whisk eggs and lemon juice together.
  7. Temper the egg mixture by adding a ladle of hot soup slowly while whisking.
  8. Stir the tempered egg mixture back into the soup off the heat.
  9. Season with salt and pepper and garnish with parsley before serving.
