A delightful and refreshing soup combining tender chicken, bright lemon, and aromatic herbs.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, combine the chicken broth, carrots, celery, onion, and garlic. Bring to a boil.
  2. Add the chicken breasts and cook until fully cooked, about 20 minutes.
  3. Remove the chicken from the pot, shred it, and return it to the pot.
  4. Stir in the orzo, thyme, salt, and pepper. Cook for another 10 minutes.
  5. Add the lemon juice and parsley just before serving.

Notes

  • For a creamier soup, add a splash of cream just before serving.
  • This soup can be made ahead of time and stored in the refrigerator.
