Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped vegetables and sauté until softened.
  3. Add chicken broth and bring to a boil.
  4. Add chicken breast and cook until fully cooked through.
  5. Remove chicken, shred it, and return it to the pot.
