  • 2 celery stalks, chopped

  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded

  • 1 teaspoon dried rosemary
  • 1 cup noodles (or rice)
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add cooked chicken, thyme, and rosemary. Reduce heat and simmer.
  6. Add noodles (or rice) and cook until tender.
  7. Season with salt and black pepper to taste.
  8. Stir in fresh parsley before serving.
