Ingredients

  • 1 pound chicken breast
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 bay leaf

Instructions

  1. In a large pot, combine chicken, broth, and water. Bring to a boil.
  2. Add carrots, celery, onions, and garlic.
  3. Season with salt, pepper, thyme, parsley, and bay leaf.
  4. Reduce heat, cover, and let simmer for 30 minutes.
  5. Remove chicken, shred, and return to the pot.
  6. Simmer for an additional 10 minutes.
  7. Remove bay leaf and serve hot.

Notes

  • Can add noodles or rice if desired.
  • Store leftover soup in the refrigerator.
