- 1 pound chicken breast
- 4 cups chicken broth
- 2 cups water
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1 bay leaf
- In a large pot, combine chicken, broth, and water. Bring to a boil.
- Add carrots, celery, onions, and garlic.
- Season with salt, pepper, thyme, parsley, and bay leaf.
- Reduce heat, cover, and let simmer for 30 minutes.
- Remove chicken, shred, and return to the pot.
- Simmer for an additional 10 minutes.
- Remove bay leaf and serve hot.
