A delicious and hearty potato soup made with cheddar cheese, garlic, and turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh thyme, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in heavy cream, cheddar cheese, and thyme. Cook until cheese is melted and soup is heated through.
  5. Season with salt and black pepper to taste. Serve topped with crumbled turkey bacon.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute turkey bacon with regular bacon for a different flavor.
