1 pound ground turkey
1 tablespoon olive oil
1 large onion, diced
4 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
4 cups chicken broth
2 teaspoons Italian seasoning
8 ounces whole wheat lasagna noodles, broken into pieces
1 cup cottage cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
In a large pot, heat olive oil over medium heat. Add the ground turkey, onion, and garlic, cooking until the turkey is browned and the onion is translucent.
Stir in the crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
Add the broken lasagna noodles and simmer for about 15 minutes, or until the noodles are tender.
Stir in the cottage cheese, mozzarella, and spinach until the cheese is melted and the spinach is wilted.
Serve hot, garnished with remaining Parmesan cheese.

This soup can be made ahead of time and stored in the fridge for up to 3 days.
