1 cup unsalted butter, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
1 cup raspberry jam
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, cream the butter and sugar together until light and fluffy.
Add the egg, vanilla extract, and almond extract, mixing until combined.
Gradually add the flour and salt, mixing until a dough forms.
Chill the dough for 1 hour in the refrigerator.
Roll out the dough and cut into shapes, using half with a hole in the center.
Bake for 10-12 minutes or until lightly golden.
Let cool, then spread raspberry jam on the whole cookies and top with the cut-out cookies.
Notes
For a festive touch, sprinkle powdered sugar on top before serving.
