A delicious and quick weeknight dinner featuring salmon and Mediterranean vegetables baked together.

Ingredients

  • 4 salmon fillets
  • 1 cup cherry tomatoes
  • 1 cup zucchini, sliced
  • 1 cup bell pepper, sliced
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, arrange the salmon fillets and surround them with the tomatoes, zucchini, and bell pepper.
  3. In a small bowl, whisk together olive oil, oregano, garlic powder, salt, and pepper. Drizzle this mixture over the salmon and vegetables.
  4. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Remove from the oven and sprinkle with olives before serving.
