An easy and delicious Mexican Birria recipe that brings a flavorful twist to traditional beef tacos.

  • 2 pounds beef chuck, cut into chunks
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 2 dried guajillo chiles, seeds removed
  • 2 dried ancho chiles, seeds removed
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine beef, onion, garlic, bay leaves, oregano, cumin, and black pepper.
  2. In a separate pan, toast the guajillo and ancho chiles until fragrant, then blend with beef broth until smooth.
  3. Add the blended chile mixture to the pot with the beef and bring to a boil.
  4. Reduce heat and simmer for about 2 hours, until the beef is tender.
  5. Remove the beef, shred it, and return it to the pot.
  6. Heat tortillas on a skillet, fill with birria, and garnish with cilantro and lime.

Notes

  • For added flavor, marinate the beef overnight.
  • Use leftover birria in tacos, quesadillas, or burritos.
