- 2 pounds beef chuck, cut into chunks
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 bay leaves
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 2 dried guajillo chiles, seeds removed
- 2 dried ancho chiles, seeds removed
- 4 cups beef broth
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large pot, combine beef, onion, garlic, bay leaves, oregano, cumin, and black pepper.
- In a separate pan, toast the guajillo and ancho chiles until fragrant, then blend with beef broth until smooth.
- Add the blended chile mixture to the pot with the beef and bring to a boil.
- Reduce heat and simmer for about 2 hours, until the beef is tender.
- Remove the beef, shred it, and return it to the pot.
- Heat tortillas on a skillet, fill with birria, and garnish with cilantro and lime.
Notes
- For added flavor, marinate the beef overnight.
- Use leftover birria in tacos, quesadillas, or burritos.
