An easy and creamy potato soup with a delicious twist of turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 6 slices turkey bacon, cooked and crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. In a large pot, sauté the onions and garlic until soft.
  2. Add the diced potatoes and chicken broth, bring to a boil.
  3. Reduce heat, cover, and simmer until the potatoes are tender.
  4. Puree the soup with an immersion blender until smooth.
  5. Stir in heavy cream, salt, pepper, and paprika.
  6. Add crumbled turkey bacon and heat through before serving.

Notes

  • For a thicker soup, blend longer.
  • Garnish with extra bacon or chives if desired.
