  • 2 cups sweet potatoes, peeled and diced

  • 1 cup turkey bacon, cooked and chopped
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, add sweet potatoes, and cook until tender.
  3. In a mixing bowl, beat the eggs with milk, salt, and pepper.
