A quick and easy recipe for delicious chicken pho that can be made in just 30 minutes, perfect for a comforting meal.

  • 4 cups chicken broth
  • 1 cup rotisserie chicken, shredded
  • 200 grams rice noodles
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • Fresh herbs (basil, cilantro, or mint)
  • 1 lime, cut into wedges
  • 1 jalapeño, sliced (optional)

Instructions

  1. In a large pot, combine chicken broth, onion, garlic, and ginger. Bring to a boil over medium-high heat.
  2. Add the soy sauce and fish sauce to the broth.
  3. Cook the rice noodles according to package instructions, then drain and set aside.
  4. Once the broth is boiling, reduce heat and let it simmer for 10 minutes.
  5. Add the shredded chicken to the pot and simmer for another 2 minutes until heated through.
  6. To serve, put noodles in a bowl, ladle the soup over the noodles, and top with fresh herbs, lime wedges, and jalapeño if desired.

Notes

  • For extra flavor, you can add star anise or cinnamon sticks to the broth while it simmers.
  • This dish can be customized with additional toppings such as bean sprouts or scallions.
