A light and refreshing soup made with chicken, lemon, and Greek seasoning, perfect for any occasion.

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup orzo pasta
  • 1/4 cup fresh lemon juice
  • 2 teaspoons dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the diced carrots and celery, and cook until tender.
  3. Stir in the orzo pasta and cook according to package instructions.
  4. Add the shredded chicken, lemon juice, oregano, salt, and pepper.
  5. Simmer for additional 5 minutes.
  6. Serve hot, garnished with fresh parsley.
