  • 4 cups chicken broth
  • 1 cup salsa verde
  • 1 pound turkey bacon, diced
  • 1 cup onion, diced
  • 1 cup corn kernels
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 cup tortilla strips

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion and cook until translucent.
  3. Add chicken broth, salsa verde, corn, black beans, cumin, garlic powder, salt, and pepper. Bring to a simmer.
  4. Let the soup cook for 15-20 minutes to meld the flavors.
  5. Add the turkey bacon back to the soup and stir in the fresh cilantro.
  6. Serve hot, garnished with tortilla strips.

Notes

  • For an extra kick, add jalapenos.
  • Can substitute chicken for turkey bacon if preferred.
