  • 2 pounds short ribs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 1 can (14 ounces) crushed tomatoes
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then brown them on all sides.
  2. Add the onion, carrots, celery, and garlic; cook until vegetables are softened.
  3. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  4. Stir in the crushed tomatoes, beef broth, thyme, and bay leaf.
  5. Bring to a simmer, then cover and reduce heat to low. Cook for 2-3 hours until the short ribs are tender.
  6. Remove the short ribs, shred the meat, and return it to the sauce. Adjust seasoning as needed.

Notes

  • Serve with pasta or mashed potatoes for a complete meal.
  • This dish can also be made ahead and reheated.
