- 2 pounds short ribs
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 cup red wine
- 1 can (14 ounces) crushed tomatoes
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon bay leaf
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then brown them on all sides.
- Add the onion, carrots, celery, and garlic; cook until vegetables are softened.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot.
- Stir in the crushed tomatoes, beef broth, thyme, and bay leaf.
- Bring to a simmer, then cover and reduce heat to low. Cook for 2-3 hours until the short ribs are tender.
- Remove the short ribs, shred the meat, and return it to the sauce. Adjust seasoning as needed.
