  • 2 cups corn, fresh or frozen
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat and sauté onion and garlic until translucent.
  2. Add the corn and diced potatoes, stirring to combine.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.
  4. Add in the shrimp and cook until they are pink and opaque.
