A quick and flavorful meal that combines the rich taste of chipotle with tender chicken and pasta.

  • 1 pound chicken breast, cubed
  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (7 oz) chipotle peppers in adobo sauce
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
  3. Add minced garlic and cubed chicken to skillet, cooking until chicken is browned and cooked through.
  4. Stir in chipotle peppers and adobo sauce, mixing well to coat the chicken.
  5. Pour in heavy cream, salt, and black pepper. Bring to a simmer and let cook for 5 minutes.
  6. Add cooked penne pasta to the skillet, tossing to combine. Stir in cheese and cilantro before serving.

Notes

  • For extra spice, add more chipotle peppers.
  • Top with additional cheese if desired.
