Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 6 eggs
  • 1 cup milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup shredded cheese
  • 1/2 cup cooked sausage, crumbled

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sweet potatoes, eggs, milk, cinnamon, nutmeg, sausage, and half of the cheese.
  3. Pour the mixture into a greased baking dish and top with the remaining cheese.
  4. Bake in the preheated oven for 35-40 minutes or until set.
  5. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add diced bell peppers or onions to the mixture.
  • This dish can be prepared ahead of time and stored in the refrigerator.
