Delicious Taco Potatoes that combine the flavors of tacos and potatoes for a comforting meal.

Ingredients

  • 4 medium potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 medium onion, diced
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup sour cream
  • 1 bunch green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake in the oven for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef and onion until browned, then stir in the taco seasoning.
  4. Once the potatoes are baked, cut them in half and scoop out some flesh.
  5. Mix the scooped potato with the beef mixture, black beans, and salsa.
  6. Fill the potato skins with the mixture and top with shredded cheese.
  7. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
  8. Serve with sour cream and green onions on top.
