- 4 medium potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 medium onion, diced
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 cup sour cream
- 1 bunch green onions, chopped
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the potatoes, then bake in the oven for 45-60 minutes until tender.
- In a skillet, cook the ground beef and onion until browned, then stir in the taco seasoning.
- Once the potatoes are baked, cut them in half and scoop out some flesh.
- Mix the scooped potato with the beef mixture, black beans, and salsa.
- Fill the potato skins with the mixture and top with shredded cheese.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
- Serve with sour cream and green onions on top.
