  • 4 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon taco seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes with a fork, then rub with olive oil and salt.
  3. Bake the potatoes in the preheated oven for 45-60 minutes, until tender.
  4. Meanwhile, in a bowl, mix the turkey bacon, cheddar cheese, sour cream, green onions, taco seasoning, garlic powder, salt, and pepper.
  5. Once the potatoes are done, remove them from the oven and slice them open.
  6. Fill the potatoes with the turkey bacon mixture and return to the oven for an additional 10 minutes.
  7. Serve hot with extra toppings if desired.
