4 large russet potatoes
1 cup cooked ground beef
4 slices turkey bacon, chopped
1 cup shredded cheese
1/2 cup sour cream
1 packet taco seasoning
1 avocado, diced
2 green onions, sliced
Instructions
Preheat your oven to 400°F (200°C).
Wash and pierce the potatoes with a fork. Bake in the preheated oven for about 45-60 minutes until tender.
In a skillet, cook the chopped turkey bacon until crispy, then add the ground beef and taco seasoning. Stir until the beef is cooked through and mixed well.
Once the potatoes are done, let them cool slightly, then cut them in half lengthwise.
Scoop out some of the potato flesh to create space for the filling.
Mix the scooped potato flesh with sour cream and half of the cheese, then fill the potato skins with this mixture.
Top with the beef and bacon mixture, then sprinkle with the remaining cheese.
Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
Garnish with diced avocado and green onions before serving.
Notes
Consider adding more toppings such as jalapeños or olives.
Adjust the spice level by choosing a mild or hot taco seasoning.
